if only...

This video cracks me up! It was a obvious parody of the JK Wedding Entrance Dance!
 If only they could really let their hair down and have a good time! Can't wait to watch the royal wedding that is set to take place April 29 when Prince William will marry Kate Middleton. According to reports from People , viewers in the United States will be able to watch the ceremony from afar on BBC America. I'm so excited to see all of the ridiculous amounts of glitz and glamour! BBC America thank you for broadcasting it and making my husband suffer through it!

Cupcake Pan Omelet

I thought it was time I share with you another great idea that you can do in cupcake pans!
Egg cupcakes aren’t really cupcakes at all, they are more like mini omelettes baked in cupcake tins.  Turning the omelettes into  ‘cupcakes’ makes them portable and easy to eat on the run.  The great thing about these egg muffins is that they can be made in advance and heated up in the microwave on your way out the door.  Brilliant!


This is a very versatile recipe:
6 slot cupcake pan
8 eggs (can substitute egg beaters)
Sliced or Shredded Cheese (I used Swiss and sharp cheddar
1 tbsp chives
Meat or Veggies (I used ham, but broccoli or sausage would be good too)
Dash of milk
Dash of hot sauce
Salt and Pepper

- Preheat oven to 350 degrees.
- Spray muffin pan well with cooking spray.
- Put meat/veggies in cups.
- Whisk together remaining ingredients. (reserve a small amount of cheese for the top)
- Pour egg mixture in each cup until just below the fill line.
- Bake for approximately 10 minutes, or until the egg is puffed up and they are just starting to brown
- If desired, sprinkle with cheese

This recipe is my favorite things to make for breakfast! It is like making 6 omelets at once and not having to stay by the stove :)
There are a lot of different combinations of ingredients you could use, so use your favorite omelet fillings

Delicious Creamy Chicken Enchiladas

Cream Cheese and Chicken Enchiladas

This was dinner tonight and since our tummies are so happy and full I wanted to share with everyone! This really is a simple dish that was quite delicious!


Ingredients

::       4 chicken breasts, roasted or boiled, skin and bones removed, meat shredded
::       One 8-ounce package cream cheese, at room temperature
::       One 10.75-ounce can condensed cream of chicken soup
::       One 4 ounce can diced green chilies
::       6 green onions, chopped, including green tops
::       10 flour tortillas (7-inch diameter)
::       One 10-ounce cans enchilada sauce
::       1 cups grated Monterey Jack cheese
::      3 cups (1 pound) grated sharp Cheddar cheese 


Preparation

    ::
         Preheat the oven to 250°F.  Spray two 13 by 9-inch casserole dishes with vegetable oil cooking spray.
    ::
      Combine the chicken, cream cheese, soup, chilies, and green onions.  Spoon 2 tablespoons of this mixture onto each tortilla and roll up.
    ::
      Pour a very small amount of the enchilada sauce on the bottom of each casserole dish and tilt the dish so that the sauce covers the bottom.  Place the enchiladas side by side on top of the sauce.  When all of the enchiladas have been rolled and placed in the dishes, take the remaining enchilada sauce and pour it over the top of the enchiladas.  Combine the Monterey Jack and Cheddar cheeses and sprinkle evenly over the casseroles.
    ::
      Cover the dish with foil and bake for 30 minutes.  Uncover and bake for an additional 10 minutes.  To serve, cut between the enchiladas and serve from the dish. 

I also think this recipe is delicious with diced black olives and yellow corn!

When you hit 2 years old you're kind of not a baby anymore so I have been working on a theme for G Mans second birthday!  That is where the whole idea started unfolding in my head for a "Mr. Man Party".  If you can't beat 'em join 'em.  Seriously it won't be to long before he will be wearing ties and carrying briefcases but hopefully not a mustache (unless they are chocolate ones on a stick). September will be here before we know it and we will get to celebrate with the little man! So glad my sister turned me loose on this project!

frosting...oh my!

Heather it must be your lucky day, look what I just came across!
Frosting Bombs!
There are cake people and there are pie people.  While I enjoy a good pie, I am by heart, a cake person.  There are icing people, who beg for the corner piece, and there are people who scrape it off and leave their cake naked. Heather is not one of those people. She will eat it by the spoonful, who needs cake?  She  might have a problem, but I know there are others out there like her.  Heck, they sell frosting shots, right?  She's not the only one. Here's a random little treat...like a cake pop...without the cake. YUM!

Frosting bombs are super easy to make!

Take a small cookie or ice cream scoop and scoop out your favorite flavor on a plate.  Freeze for about an hour or overnight, you just want to firm it up, but don't worry, it won't freeze rock hard. When you are ready to go, take them out of the freezer and roll the balls in your hand to smooth out any big bumps. Stick them back in the freezer for 15 mins.

Melt the candy chips in the microwave according to the instructions. Stick sticks in the icing balls.

Dip each in the melted candy coating and tap gently on the side to let excess fall off.

Quickly sprinkle with toppings and set in a short glass to harden. 
Voila!  Sinful goodness on a stick that might put me on a dentist's hit list. Hee hee. Oh, and totally GLUTEN FREE, just another bonus.  YUM!

one day without shoes

This girl is a HUGE fan of TOMS Shoes.  Today I celebrated the One Day Without Shoes  movement to spark curiosity, conversation and change. Not only is the footwear fashionable, but for every pair you purchase TOMS will give a pair of new shoes to a child in need. People making everyday choices that improve the lives of children.

In 2006, American traveler Blake Mycoskie befriended children in Argentina and found they had no shoes to protect their feet. Wanting to help, he created TOMS Shoes, a company that would match every pair of shoes purchased with a pair of new shoes given to a child in need. One for One. Blake returned to Argentina with a group of family, friends and staff later that year with 10,000 pairs of shoes made possible by TOMS customers.

Roasted Asparagus

Alright ladies time to share with you one of my favorite recipes! I love love love it! Hope you will enjoy!

Roasting intensifies the woodsy flavor of asparagus. A thin crust of earthy cheese adds a bit of crunch!
PREP AND COOKING TIME 25 minutes
MAKES 6 Servings
2 bunches of asparagus (about two pounds)
2 tsp. olive oil
1/4 tsp salt
1/8 tsp. freshly ground black pepper
1/2 cup packed freshly shredded Parmesan cheese
2 tsp. fresh lemon juice

1. Preheat the oven to 400*. Hold the end of an asparagus stalk and bend until it snaps off. Repeat with remaining stalks and discard woody ends.
2. Toss asparagus with olive oil, sprinkle with salt and pepper, and toss well. Arrange asparagus in an even layer in a shallow baking dish (I cover first with foil to eliminate one less mess!) Sprinkle with Parmesan cheese and bake until asparagus is crisp-tender and cheese is browned, about 10 minutes. Sprinkle with lemon juice.


Serve hot or warm!
