Pancake Cupcakes ah-ha moment!

ah-ha moment!

Sometimes the best recipes are based on the simplest ideas.
Like this one:  Make pancake batter & bake it in cupcake tins!  

Ingredients
2 cups Original Bisquick mix
1 cup milk
2 eggs
1/2 stick butter
12 tbsp filling: try Nutella, fruit jam, or cream cheese
confectioners sugar for sprinkling
maple syrup for serving

Instructions
Preheat oven to 400 degrees. Generously coat the bottom & sides of a 12-muffin tin with butter. Make Bisquick pancakes per instructions on the box. Fill each cup in the muffin tin half-way. Add 1 tbsp of filling to the middle of each muffin, then cover with the remaining pancake mix. Bake 20 minutes. Remove from oven, place on serving dish & use a flour sifter to sprinkle with sugar. Serve with warm syrup.

  1. What a great idea! I'm already thinking of all the add-ins I put in my regular pancakes, (strawberries, chocolate chips, etc.)to add into these nifty muffins! Thank You!

  2. I made these today. They were very yummy but the fillings all sank to the bottom of the muffins. Any trick to getting them to stay in the middle? Thanks! :)

    I'm sad to hear that the yummy filling all sunk to the bottom of your muffins. I honestly have never had a problem with mine. I generally do a mix of blueberries and cream cheese. Another idea for you might be using a meat injector to inject your fillings in your cupcakes after they are baked & cooled. I hope that helps! Happy baking sweet Little Old Me!

  5. Tip: You can just fill the tins 2/3 full, then put the filling mix on top. When the muffins bake up, they will enclose the filling... ENJOY!!! =0)

  6. there is a baker's secret to get the add in's such as cranberries, strawberries, blueberries, chocolate chips to suspend in the batter. Take the add in and add just a couple of tablespoons of flour (or dry pancake mix)and mix together. The flour coats the add ins and help suspend them in the batter! Good luck. I know I have had great luck with this trick! Happy baking! As for the other fillings, jam and cream cheese....instead of putting it in the middle, try placing it on top of your muffin before you bake it!

  7. These look delicious! This would be a great idea for a breakfast or brunch because all of the muffins come out at the same time and you wouldn't have to eat those first pancakes that turn soggy after sitting on a plate waiting to be eaten.

  11. Oh ladies you dearly amaze me! I love that we can all help each other out! Lala~ You can definitely use the pancake mix that only calls for water. I didn't have any on hand when I began to play in the kitchen! Love the fun ideas and add-ins Im hearing! Happy Tuesday!

  13. Wow these sound great! I'm definitely gonna try them out. Can you make ahead & freeze for later like regular flat pancakes?? Would love to be able to pop these in the toaster oven later on. Thanks for the great recipe.

  15. Can you use the blueberries or Raspberries that are frozen I'n case you don't have fresh on hand? Have you ever just served them plain? They look yummy

  17. I made these tonight .. and I tried the tricks listed above .. with my mini Chocolate Chips ... seems they still sank to the bottom. :( The kids still enjoyed them. I added maple syrup and a little vanilla to the batter.

  18. Thank you! I made plain, chocolate chip & peanut butter versions this morning. My kids are going CRAZY over the chocolate chip ones. I love the idea of putting bacon in them. This will definitely be a Christmas morning treat for us! Love them!

    Had now issues, used the regular Bisquick pancake recipe. I did plain cream cheese for filling, and strawberries and choc. chips, choc. chips and peanut butter chips!! The kids went nuts-they said they were better than regular waffles and pancakes-LOL

  23. I make these every Saturday morning for my kids. They don't like pancakes, but they love these. I use rainbow sprinkles and mini chocolate chips. I have used the instant mix and it works fine. Thanks for the great idea!

  24. I wonder why you cannot add the thicker syrup like karo to the filling and be done with the muffin and all you add is the powdered sugar.
